Segment lemons using this method to leave only crescents of flesh.
STEP 1: Trim the ends from the lemon. Set the fruit upright and cut away the skin and white pith, following the curve of the fruit.
STEP 2: With the lemon in your hand, slide a knife down one side of a segment, cutting it from the skin. Cut down the other side; pull out the segment. Repeat with the remaining segments. Discard pips.
